02 sensor question

on my 00 mustang v6 i am needing an 02 sensor.... a few questions and I hate asking so many but i'm kinda new at exhaust work so bear with me.

IF (big if) i go without a cat and run straight pipe, i know the check engine will come on, but i read that they make a 02 sensor simulator which fools the ecu to thinking the cat is there and ok... is this true?
if not
What 02 sensor should i get and where do you guys buy your parts from?
