Purchased a 2002 Lincoln LS V6 with 24,000 km.
Previous owner used regular fuel.(octane rating 87)
My manual says to use Octane rating 91
There is no ping or knocking with regular gas but should I switch to premium gas full time, just once in a while, or stay with regular if there is no ping or knocking?

I've run nothing by 93 in my LS. The LS was designed to run on 91 with the higher compression of the engine. I don't think you'd hurt anything as long as you don't hear pinging or knocking. It's just that you might not get the performance the LS was designed for.

It's very likely hurting your mileage, as well. Run a couple tanks of 93 through it and see what your mileage looks like compared to current.
Honestly, the cost differential between grades is very small...like $2.00 per tank.
Just for reference, my modded '00 V8 currently gets between 28-31 mpg on the highway depending on conditions. Before my mods, it got between 25-28. I think the V6's are rated like 1-2 mpg better than the V8s.
