80 Olds gas problem

Alright, it's dead middle of winter here, it's fine mostly, but if my car idles for at least 10 minutes, then I drive it, it will eventually start stalling when I press down on the gas pedal. It gets annoying because it happens at every stop sign and every stop light... when I'm actually driving, it would occasionally stall if I press down too hard, but I have to keep a light foot on the pedal. Even when the problem isn't happening, I press lightly on the pedal and it would be able to maintain 55-60 mph on the highway(this is pushing down maybe an inch at the most).
I think it may be a choke problem, although I'm not too sure, but this situation is kind of unique, as I've never seen or heard of it in my time working in a auto repair store(only did minor mechanical jobs mind you and by minor, tires, oil changes, lights and batteries are implied).
